They aren't rivets - although this seller calls them rivets - they are hammer drive screws.
@Exige is expert in these matters... hopefully he'll respond.Are they called hammer rivets
I would centre punch the rivet (as centrally as possible) then drill down the full length of the "hammer rivet" with a small drill then slowly work up in size until just a thin skin is left which you can tease out with a screwdriver. If you don't want the yoke again then a short drill hole in the centre then use a countersink bit to drill off the rivet head.
